What Vegans Eat – Day 867, Travel Edition

Breakfast: We are rich with fruits! I made a fruit salad with the nectarines and plums from Gary’s cousin’s Nancy’s tree, plus the figs from our host Roswitha’s tree and pineapple we had bought a few days before. This topped our Rolled Oats along with Walnuts and Soy Milk.

Lunch: This is a go-to type of meal when traveling. Gary picked up a large can of Black Beans. I smashed an Avocado and mixed it with chopped Red Onions. Gary’s cousin Nancy gave us some zucchini from her garden. I chopped it up with the rest of the Red Onion, added some frozen Corn and the Black Beans and mixed it with an organic spice and herb mix Nancy gave us as well. We rarely use a microwave except when traveling. We heated up the Bean and Veggies mix and warmed the Tortillas. This was a great lunch!

Dinner: Gary’s dad is 92 today and we celebrated with his family at Aldo’s in Los Gatos. Gary and I started with the Radicchio and Arugula Salad with Balsamic Vinegar.

Gary requested a vegetable plate and the server said it consisted of Broccoli, Carrots and Potatoes. I requested a special vegetable plate choosing the vegetables I wanted: Asparagus, Tomatoes, Olives and Mushrooms. Gary decided to go with my selection, without the mushrooms

The server surprised us with a plate with original request as well.

Evening: Back in Palo Alto, where we are staying, we had some Plums from cousin Nancy’s tree.
