What Vegans Eat – Day 9

Breakfast: You are not still eating cereal out of a cardboard box, are you? As the artist Tom Lieber said when I interviewed him on my IT’S ALL ABOUT FOOD SHOW,
 

“How uninvolved do you want to be with your life?”


 
Why grab for a box, even the “healthy” “natural” ones, when you can make a new creation, all your own, every morning, easy and deliciously? With a little thoughtful planning you can have the ingredients on hand, ready to go, to make your morning cereal a master piece! What a great way to start the day. This morning’s oeuvre d’art consisted of organic raw oats, organic ground flax seeds, organic sunflower seeds, organic pumpkin seeds, organic unsulphured apricots, leftover homemade fruit compote and unsweetened soy milk (organic soybeans and water).

 
LUNCH: We don’t cook up amazing meals fresh every day because sometimes there are LEFTOVERS. And that’s something to celebrate when it’s lasagna! Gary whipped up a delicious dressing of Dijon mustard, Balsamic vinegar and cashew cream for the green salad.

DINNER: I was quite sated from lunch and my daily green juice as I went off to the Vegano Italian Preview and Tasting featuring Miyoko Schinner‘s vegan cheeses. I got to nibble on some crudités, sip on some great wine and eat real cheese – vegan cheese, along with chocolate treats by my friend, Fran Costigan.

EVENING: I came home to finish up my daily blog. And I was rewarded with a lovely treat made by Gary, poached pears with a red wine syrup and vegan ice cream. Life is gooey good!
