What Vegans Eat – Day 953

Breakfast: Fortunately for me, I got a decent amount of work done late last night and got to bed before midnight. I awoke a little before 8am and starting the day at high speed. First, I went to my dad’s doctors office to pick up some forms I left them. Apparently they don’t know about faxing or scanning and emailing and stamps for snail mail are not in their budget. Okay, I accept this operation stuck in the Dark Ages. I wanted to do some grocery shopping for my parents before they got up and this office was on the way to the store. Then I landed at Trader Joe’s and blew in and out like a tornado, buying lots of healthy food. I arrived back at my parents house and surprised them with the goods. Then I made myself some breakfast. Yesterday’s Black Bean Stew with Broccoli, Potatoes and Onions became a soup. I liked it better this way.

Dinner: I got home late in the afternoon. Gary made a dinner of the simple, clean foods I was craving: Kale Salad, Crudités, Red Pepper Hummus, and crunchy Baked Polenta with Tomatoes and Celery. We had eaten this Polenta soft the other day. I like that Polenta firms up and can be baked. It becomes something completely different.

Evening: We went to see a new production of As You Like It at the Classic Stage. Afterwards we went to Chloe’s for soft serve Fruit served in vegan Waffle Cones. I had chocolate with Strawberries on top and Gary got the Banana with Blueberries on top. The soft serve is made with fruit, water and a touch of organic cane sugar. It was wonderful and not too sweet. Just like we like it.

The subway took forever to get home. I looked forward to a good night’s rest. I deserved it.
