What Vegans Eat – Day 954

Breakfast: I’ve said it before and I’ll keep saying it. I like sleeping in my own bed and being at home! I’ve been spending too many nights at my parents’ home. I was tired when I woke up and couldn’t get back to sleep. I was looking forward to catching up on my work but without enough sleep it was going to be rough. I thought I would make a nice breakfast and then take a nap. I made Late Night Corn Cakes. While preparing them I had one of the Sludgies I had frozen and defrosted the night before, made with Kale Stems, Celery, Carrots, Bananas, Cacao Nibs, Lemon and Water. I piled the pancakes on a plate that is part of a set of dishes I received a long time ago from some friends who live in France and came to visit. I love those dishes and the color of the pancakes blend right in with them.

Lunch: I tried to nap but it was difficult because I had so much on my mind. When I got up, Gary made a nice platter of food: Red Pepper Hummus, Celery and Carrot Sticks, Black Olives, Walnuts and Roasted Red Peppers.

Remember the Mung Dal from a few weeks ago? I froze the remainder and defrosted it yesterday. It was just as good as before.

Dinner: I finally got my energy together to focus and get to work. When I was all done we were ready for a late supper. I made a Red Lentil Soup with Porcini Mushrooms, Herbes de Provence and Red Onions for me. Gary made Oatmeal with Brown Sugar for him. They both looked very similar. I love how quickly the soup came together and cooked fast. I ate mine with some Cashews. It was delicious.
