What Vegans Eat – Day 996

Breakfast: We took a red eye flight home and arrived an hour early. We got to our apartment at about 6am. The first thing we did after unpacking was to sit down to a perfect cup of Teeccino with Cashew Cream.

Next, I made Fruity Corn Waffles. I substituted Dried Apricots since we didn’t have any fresh Apples. We had a full, unopened jar of REAL Apricot Butter that we made before we had left for California along with some Raspberry Jam and Maple Syrup for toppings. With our bellies full we took a nap.

Lunch: We don’t have any fresh food in the house so it was a good excuse to visit Green Zenphony for a late lunch. We ordered the Stir Fried Pea Pod Leaves. The owner, Wendy was telling us how expensive the leafy greens have been lately, but she hasn’t changed the prices. The Stir Fried Pea Pod Leaves don’t have a price on the menu, it says “special price” and it was $15 this time but so worth it. We needed our greens

I also needed a Red Cabbage Juice with Lemon.

I splurged and ordered the Sizzling Wonder.

Gary ordered one of his favorites, The Veggie Pork Noodle Soup.

Dinner: It was good to walk to the restaurant and back home. Later for dinner I ate a couple more Fruity Corn Waffles, this time with Apricot Butter and Tahini. Gary had a bowl of Rolled Oats with Cashew Milk and Dried Apricots.
