Chipotle Sauce

This is a special sauce that goes great with burgers, over whole grains or vegetables.

3/4 cup raw whole cashews
1 roasted red pepper, diced, or raw red pepper
1 clove garlic or 1 teaspoon garlic powder
2 chipotle peppers packed in adobo sauce, rinsed or 1/2 teaspoon chipotle powder
2 Tablespoons Apricot Butter or other light, unsweetened, colored jam, or three dates
¼ cup apple cider vinegar
1 teaspoon onion powder
1 teaspoon chili powder
1 Tablespoon miso (we use South River chickpea miso which is soy-free and gluten-free)
1 cup water

Place all the ingredients in high-powered blender and blend until smooth. Refrigerate until ready to serve. Last 3-4 days in refrigerator.

    • Hi Maya, I think you are asking about the Chipotle Peppers packed in Adobo Sauce? We have not been able to find an organic version of this but there are a few conventional brands, like San Marcos Chipotle Peppers packed in Adobo Sauce. It contains chipotle peppers, tomato puree, onions, vinegar, canola oil, sugar, salt, paprika, garlic. You can also get dried Chipotle Peppers and make your own “Chipotle Peppers in Adobo Sauce” that you can use in our creamy sauce recipe for Chipotle Sauce. Another option is to substitute dried Chipotle Pepper Powder. Start with a 1/2 teaspoon and add more to taste.
