Michael Greger, M.D., is a physician, author, and internationally recognized professional speaker on a number of important public health issues. Dr. Greger has lectured at the Conference on World Affairs, the National Institutes of Health, and the International Bird Flu Summit, among countless other symposia and institutions, testified before Congress, and was invited as an expert witness in defense of Oprah Winfrey at the infamous “meat defamation” trial. Currently Dr. Greger proudly serves as the Director of Public Health and Animal Agriculture at the Humane Society of the United States.

Dr. Greger’s recent scientific publications in the American Journal of Preventive Medicine, Biosecurity and Bioterrorism, Critical Reviews in Microbiology, Family & Community Health, and the International Journal of Food Safety, Nutrition, and Public Health explore the public health implications of industrialized animal agriculture.

Dr. Greger is also licensed as a general practitioner specializing in clinical nutrition and was a founding member of the American College of Lifestyle Medicine. He was featured on the Healthy Living Channel promoting his latest nutrition DVDs and honored to teach part of Dr. T. Colin Campbell’s esteemed nutrition course at Cornell University. His latest two books are Bird Flu: A Virus of Our Own Hatching and Carbophobia: The Scary Truth Behind America’s Low Carb Craze. Dr. Greger is a graduate of the Cornell University School of Agriculture and the Tufts University School of Medicine.

  1. Gentlemen or Ladies, I would like to try some of the recipes, but agar agar is very expensive. Is there a cheaper, but good substitute? Would yeast buds take the place of nutritional yeast? If you can help me, I’d really appreciate it. . .thank you. . . Ida

    • Agar can be expensive, but a little goes a long way. The health food stores general sell flakes, not powder which is hard to use and for some reason, more expensive. Telephone brand, which you can find online sells small packages, .88 ounces or 25 grams. The lowest price I found was $0.88 on Amazon.com. If you are just trying it out this is a good way to go. If there is an Asian market in your area you might see if they sell it there. There is one company, San Francisco Herb and Natural Food Company, that sells 1 pound of agar powder for $9.50, the best price anywhere and a pound will last a while. But you have to spend $40 at the site so unless you are interested in other herbs and spices this may not work. Here’s the website link: http://www.herbspicetea.com. Just search the catalog for agar. In our cheese recipes you don’t have to use agar. If you don’t you will get a creamy cheese-like sauce which is delicious and great poured over lots of dishes. But if you want cheese that can be sliced or grated, then you will need to add the agar. Red Star Nutritional yeast (vegetarian support formula) can be found in health food stores and contains B12. Nutritional yeast is not the same as Brewer’s yeast and the taste is very different.
