    I have been searching your website for the recipe for homemade soy milk you often discuss on your show, could you share it with me and your listeners please? I would love to give it a try! Also where do you have luck getting your organic dried soy beans online? I cannot find them locally in my markets. Thanks for all you do and inspire!

    • Hi Lisa,

      The recipe is not on our site because it is from Miyoko Schinner’s book, The Homemade Vegan Pantry: The Art of Making Your Own Staples. But the recipe is simple enough. The key is to NOT soak the soybeans first. Most recipes for soy milk tell you to soak the beans first but then you get this awful paint like smell and an overly beany flavor. Miyoko did the research and the solution is to cook the beans without soaking. Her recipe is to boil 8 cups of water. (I use less, about 5 cups because we distill our water and I don’t want to waste it). Add 1 1/2 cups of soybeans to the boiling water and cook for 1 minute. Drain and let cool. Take 1/2 of the beans and blend with 3 cups water and then filter through a nut bag. Save the separated fibrous “okara” to use in other recipes. Repeat with the remaining beans. Then bring the soy milk to a boil and simmer for 5-10 minutes, stirring to prevent burning, thickening, clumps, skin formation, etc. We use the nylon Pro Quality Nut Milk Bag from elliesbest.com. It’s messy but works very well.

      I bought a lot of organic soy beans in bulk from Whole Foods, before the pandemic started. I ordered organic soy beans and a lot of other beans and food in bulk from sunorganic.com on April 19 and we haven’t received them yet. The website says they are 3 weeks behind in shipping. I am patient and hopeful. – Caryn
