What Vegans Eat – Day 312

Brunch: After being up very late finishing the REAL End-Of-Year report and fundraising letter we got up late. Fortunately there were plenty of leftovers for a nice brunch: Brown Rice Pasta and Peas, Vegan Buttermilk Pancakes, Baked Tofu, plus a fresh pot of Vanilla Black Tea.

Snack: Tomorrow is the annual vegan cookie swap party at the home of the Walsh’s in Manhattan. We always enjoy going but because of other plans we have missed many. This year we plan on being there. We were both in the mood for a healthier treat and I made a batch of Apricot Nut Balls and Fruit & Nut Truffles and we sampled them both.

Dinner: My cousin Donna and her daughters Kathryn and Meghan are visiting from Jacksonville. Kathryn is vegetarian now (yay!) and Donna asked me to choose a vegetarian restaurant for us to meet at. We went to Blossom on Columbus. I ordered the Forbidden Tofu with trumpet mushrooms, leek & fennel compote, forbidden rice, sautéed broccolini, dill crème. The tofu was marinated in beet juice which gave it a light salmon color and delicious flavor. The sauce was fabulous!

Gary went with his favorite Soy Bacon Cheese Burger as did Kathryn. He kept saying on the way to the restaurant that he was going to try something new. Once he got there and read the description of the burger on the menu that’s all he wanted. Plus it went well with his Pinkus Organic Hefe-Weizen. Meghan had the Nachos made with house-prepared tortilla chips, tapioca cheese, jalapeños, tofu sour cream and guacamole; Donna went with the Mushroom Ravioli wild mushrooms, truffle “butter” sauce.
 
Evening: For a while now we have missed our Peppermint tea in the evening. I thought we were out of it and finally got to ordering a pound of organic peppermint tea online with some other items. While checking our inventory of herbs and spices I found more peppermint tea, about 1/2 pound. Hurray! We made a pot of peppermint tea. It was like welcoming an old friend home.

    Where do you order your peppermint tea from please? I usually grow my own, but not this year and am looking for a good source.

    • We buy organic peppermint tea by the pound from Starwest Botanicals. It’s very reasonable when you buy large quantities and if you keep it in a cool dry place it will stay fresh.
