What Vegans Eat – Day 360

Breakfast: I wanted scrambled eggs, vegan-style, so I made them. I had been thinking about this for a few days and finally set out to put my thoughts on the frying pan. I was please with the results. This Vegetable Scramble was served with Jasmine Tea (Arbor Teas) and Baked Potato Chips – thinly sliced pieces of baked potatoes, baked again until warm and slightly crispy.

Lunch: With dinner plans later in the day, I kept lunch simple – Sliced Oranges, Medjool Date, Apricots, Walnuts, Cashews, Pumpkin Seeds and a Banana with Peanut Butter served with Vanilla Black Tea (Arbor Teas).

Dinner: Our friend Maura was in New York from San Jose, training for a new job. This was our third visitor from California in one week. We planned for her and her colleague Bonnie to meet Gary and me at Candle Café in Manhattan. Gary and I got there first and order the Green Goddess, a green juice. I ordered mine without apple.

Once Maura and Bonnie arrived we got to the serious part of the evening – eating! We started with the Candle Nachos made with Adobo Jackfruit, Tapioca Cheese, Chili Beans, Corn Chips, Pico de Gallo,Tofu Sour Cream, Guacamole.

I had the Wild Mushroom Salad made with Baby Arugula, Baby Spinach, Fennel, Caramelized Shallots, Roasted Butternut Squash, and Cabernet Fig Dressing.

Gary chose the Avocado BLT which came with Tempeh Bacon, Lettuce, Tomato, Pickles, Fries, Mixed Grain Toast, Chili Aioli.

We cleaned our plates and got ready for dessert. I started with a grain coffee with soy milk.

Gary and I shared the Apple/Peat Pie with Chocolate Hazelnut Ice Cream.

Maura and Bonnie ordered the Chocolate Mousse pie with Vanilla Coconut Ice Cream.

It was a pretty perfect meal from start to finish. With our bellies sated we grabbed a quick photo in front of the restaurant before heading to the subway to go home.

    Looks like a fabulous dinner!

    Out of curiosity, is there a reason you skipped the apple in your juice? I noticed you’d don’t include it in your daily green juices either. Is it due to the sugar?

    • Good observation! Yes, I believe fruits are best eaten whole, not juiced because of the sugar. I developed a taste for the bitter greens when I was being treated for advanced ovarian cancer almost ten years ago. On occasion I may treat myself to a juice with apple in it but not very often. The carrots are even too sweet so I don’t use too many.
