What Vegans Eat – Day 530: Special Travel Edition

Breakfast: No it’s not Oatmeal! It’s cooked Millet with Raisins, Sunflower Seeds, Strawberries and Almonds. Sometimes we cook up a lot of millet for a meal and leftover millet makes a great breakfast.

Lunch: A family BBQ was planned for dinner so I went with simple light lunch – Corn Thins with Avocado, Red Onion and crumbled Nori. Gary said it smelled like I had eaten a bagel with cream cheese, red onion and lox. I hadn’t thought of it before but the Avocado took the place of the cream cheese, the Nori replaced the lox and the Red Onion was, well, a red onion.

Dinner: Lots of hands helped put together the family BBQ. I munched on Strawberries as I watched the food preparation. Gary assisted sister-in-law Tammy with the Kale and Tomato Crostini.

Cousin Nancy made the Zucchini Noodles for the Pesto Pasta dish. These raw “noodles” would then be blanched and tossed with Brown Rice Pasta and freshly made Pesto with basil from Nancy’s garden.

Gary prepared the Baked Lime Tofu and Field Roast Sausage to fill Spouted Corn Tortillas.

For dessert we started with Trader Joe’s Frozen Desserts: Vanilla Soy Creamy, Black Cherry Soy Creamy and Chocolate with Coconut Milk. Had I known nephew Zachary was going to make some Peach-Mango-Pineapple sorbet I would have skipped the other choices. In the end had it all!

Evening: We had a little Chamomile Tea for a relaxing evening.

  1. This is great! I was wondering about millet. I, eating oats with raisins, soy or almond milk, seed or nut and cinnamon, every morning. I put it in leak free container,me hake it up, and I really eat it around lunch time. It’s a great, on the go meal. I still really enjoy it, but was also looking for an alternative, since I realized feel better when gluten free and saw millet. Will need to read more about millet. Thank you Cayrn, this is a great website.
