Baked Falafel Burgers

Baked Falafel Burgers are bursting with the great combination of flavors as the traditional Falafel, only without all the oil and salt. And since they are baked and not fried, they are even easier to make. We recently improved the recipe and updated it here. Serve on your favorite bun with your favorite burger fixings, along with our Red Pepper Hummus and Baba Ganoush from the REAL Mezze Platter (below).

1 3/4 cups garbanzo beans, cooked from dried beans or from a can (look for no-salt added), rinsed and drained
1 cup cooked grain (rice, quinoa, millet)
4 teaspoons cumin
4 teaspoons coriander
4 cloves fresh garlic, chopped
1 small onion, about 1/2 cup chopped
1/4 cup fresh parsley, minced

1. Preheat oven to 400oF. Line a baking sheet with parchment paper.
2. Mash the garbanzo beans in a large bowl. Add in grain, parsley, garlic, onions and spices and continue to mash all the ingredients until well-incorporated.
3. Roll the “dough” into 8 balls of equal size. Press each ball flat into a burger shape, about 2 /12 to 3 inches wide in diameter, and place on parchment paper-lined baking sheet.
4. Bake for 15 minutes. Remove and flip each burger. Bake for another 15 minutes. Remove from over and serve hot.

Falafel can be prepared in advance, refrigerated and reheated at another time.
