I don’t make this dressing enough and love it when I do.
4 carrots, cut in chunks
1 inch of fresh ginger, peeled
1/2 cup water
1 Tablespoon sesame oil, optional
2 Tablespoons apple cider vinegar
In a high-powered blender, combine all the ingredients and blend until smooth. If you don’t have a high-powered blender, grate the carrots and ginger first before blending. If too thick add more water, a little at a time.
