Yesterday was Earth Day and my birthday. I love that my birthday is on Earth Day. This year is unlike any other. The Earth is showing us with the Coronavirus that we cannot take her for granted. When we abuse the Earth and other living species and exploit them, she will fight back and win.
We are obeying the shelter-in-place order hoping to slow the spread of the virus and stay safe. Still, I wanted to celebrate my birthday! I got dressed up, put on some makeup and styled my hair. It helped me get in a festive mood. For breakfast, I made a new version of our Corn Pancakes. The change is noted in the recipe. I was craving being near Santa Cruz, California visiting Dharma’s restaurant for their corn pancakes. This recipe, served with our homemade vegan butter and maple syrup was deliciously decadent and worthy of a birthday celebration.
Breakfast Pancakes
For dinner we were having a Zoom party with my sister’s family, my brother’s family and my sister-in-law’s cousin’s family. I requested that Gary make his Chicken Fried Tofu with Mashed Potatoes and Sautéed Collards and Kale. And salad! It was one of the best meals I ever had! It felt like we had gone out to one of our favorite vegan restaurants.
We started with a Romaine Lettuce Salad with Avocado, Tomatoes and Kalamata Olives.
Here is Gary’s signature Chicken-Fried Tofu served on a bed of Mashed Potatoes and Sautéed Greens smothered in a rich Country Gravy.
I like to make my own birthday cakes. Yesterday I created a brand new recipe, Chocolate Pumpkin Cake with Whipped Pumpkin Cream. It was so good, better than I dreamed it to be.

Zoom Birthday Party
Having a party on Zoom was fun, and the cleanup was a lot easier!
