This no-oil pesto is a powerfully nutritious sauce packed with superfoods: Kale, Walnuts, Garlic. And it’s as delicious as it is nutritious. This is a new must-have all the time sauce in our house. Serve on everything! More please!
2 cups loosely packed kale leaves
3/4 cups walnuts
1/4 cup nutritional yeast
1 cup unsweetened soy milk
3 fresh garlic cloves
1 teaspoon black pepper
1 Tablespoon miso
Put all the ingredients except the miso in a high powered blender and blend until creamy. Pour into a saucepan. Heat, stirring occasionally on medium heat until sauce begins to bubble. Remove from heat and let set for a minute or two. Stir in miso. Toss with pasta, whole grains, steamed veggies or serve as a dip.
This is delicious, full of flavor, healthy and very easy to make. I sometimes use a little more nutritional yeast than the recipe calls for and add a little fresh lemon juice and/or lemon zest to crank the flavor up a notch.
Thanks for trying it. I agree, it’s delicious! I also agree about flavoring it the way you like. I once made this dish for my sister in Florida, and without the exact same ingredients that I use at home, it was a little different and needed adjustments.
Soy milk does very bad things to me. Have alternative suggestions?

Any unsweetened non dairy milk will be fine. Almond, Cashew, Oat, Hemp, Rice, etc. Each will impart a slightly different flavor.
