This salad is great on its own, stuffed in a pita bread, or served on top of a bed of greens.
One cucumber, chopped in small pieces (peel if not organic)
3 Tomatoes, chopped
1 scallion, chopped
1/2 finely chopped fresh mint
1/2 finely chopped fresh parsley
In a large bowl mix cucumbers, tomatoes and scallions together with parsley and mint. Toss with Tahini Dressing. Serves 4.
