This salad is great on its own, stuffed in a pita bread, or served on top of a bed of greens.
One cucumber, chopped in small pieces (peel if not organic)
3 Tomatoes, chopped
1 scallion, chopped
1/2 finely chopped fresh mint
1/2 finely chopped fresh parsley
Tahini Dressing
In a large bowl mix cucumbers, tomatoes and scallions together with parsley and mint. Toss with Tahini Dressing. Serves 4.
Looks like it would be great mixed with either short brown rice or bulgur, especially with a little fresh lemon juice.
