We’ve been making garbanzo bean flour for a long time. I recently decided to add a little baking soda to the original recipe and we love it, we are making it all the time now.
Ingredients
2 cups garbanzo bean flour
2 teaspoons ground coriander
1 teaspoon onion powder
1 teaspoon zatar or oregano
1/2 teaspoon baking soda
1 2/3 cups water
2 tablespoons sunflower seeds or sesame seeds
Directions
Preheat oven to 400oF.
Line a 1/4 sheet (9 1/2″ x 13″) pan with parchment paper.
In a medium sized bowl mix together the flour, herbs, spices, and baking soda.
Slowly add in the water, starting with a cup, and beat with a whisk or fork. Then add in the rest.
Pour the batter into the pan. Sprinkle the seeds on top.
Bake for 30 minutes.
Let cool for a few minutes before removing from pan.
This is a versatile flatbread. I like using it for avocado toast.
