Rancho Gordo Christmas Lima Beans are beautiful. The dry bean is splashed with a deep maroon color. During this Coronavirus pandemic with all of us nonessential workers staying at home, I found myself staring at a jar of dried Christmas Lima Beans on the shelf. I thought of the song from the musical Mame, “We Need A Little Christmas” and knew it was time to cook those beans. Here is We Need a Little Christmas Lima Bean Soup.
3 cups cooked Rancho Gordo Christmas Lima Beans
1 cup shredded raw green cabbage
3-4 yellow potatoes, chopped
1 onion chopped
1 stalks celery chopped
2 carrots chopped
4 cups vegetable broth or water
2 teaspoons smoky paprika
1-2 teaspoons fennel seed
In a large pot, mix all the ingredients together and bring to a boil. Reduce heat to a simmer and cover. Cook for about 30 minutes or more, until all the vegetables are soft and tender.
