What Vegans Eat – Day 105


Breakfast: I can’t get enough of these chickpea flour no-egg omelettes. They are so satisfying and make a lovely brunch. No-Egg French Herbed Omelette with Shiitake Mushrooms, Onions and Corn.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
Dinner: I love when Gary makes Pesto and this might be the most delicious version he has come up with. It’s made with sunflower seeds instead of the traditional pines nuts, which are not only scrumptious but great for those who have tree nut allergies or find pine nuts too pricey for their budget. Sunny Pesto with Brown Rice Pasta, a sprinkling of nutritional yeast and red pepper flakes, served with a Romaine Lettuce Salad with a Balsamic Tahini Dressing
Evening: Mint Tea and Fresh Oranges. Mint and Oranges are a lovely pair.
