What Vegans Eat – Day 1080, Travel Edition

Lunch: It’s my catch up day on all other projects aside from The Music Man. I feel like there isn’t a moment to waste which is why I am glad I had the Red Lentil Soup to nourish me quickly when I needed the fuel.

 
Afterwards, I grabbed one of the cooked Purple Potatoes leftover from a couple of nights ago. Purple Potatoes, or Purple Sweet Potatoes are one of my favorite foods, but they are not very photogenic, so there’s no photo here!
 
Snack: Gary was at rehearsal, finishing up the choreography on a couple of numbers in The Music Man. I had a deadline on a project and worked on finishing before he came back. I planned on eating a late meal with Gary but to hold me over I had a Banana with Peanut Butter.

 
Dinner: I surprised Gary with a platter of Maki filled with Quinoa, Avocado and Baby Greens and a Peanut/Lemon dipping sauce. I am getting pretty good at making maki with a towel instead of the traditional bamboo mat. Next time, we pack the mat.

 
Gary stopped at the store and picked up some green juices for us. We are stepping up on our green juice consumption again. Unfortunately, because we are traveling, it’s next to impossible to avoid the plastic bottles and cups. This is the choice we make.

 
Our dessert is simple – Rice Cake with Peanut Butter and homemade Apricot Jam from one of our cast members.
