Lunch: We’re done! It’s our day off and the day is filled with activity. We tried to sleep in but we had a cast party to go to and it started at 10am. It was a pot luck. We are leaving tomorrow night so I wanted to bring something that was made with the ingredients we had left. With Sweet Potatoes, Garbanzo Beans, Black Beans, Red Onion and Tahini Dressing, I made a Sweet Potato Bean Salad. We had some Baby Greens too and Gary suggested I use them as a bed for the salad. It was a beautiful dish!
After the party we were going to have a meeting but we all decided to postpone it. Gary and I went to Roy’s Station for tea instead. I had an Assam Ceylon Tea with Soy Milk and Gary got his Mint Tea with Steamed Soy. To celebrate, we shared an Inspired Cookie – Peppermint Chocolate Chunk Cookie, vegan and gluten-free. I love the minty flavor.
Gary’s cousin came by with fresh Oranges from her tree. I promised myself we would eat them all by tomorrow to keep our immune systems strong before our flight.
Dinner: The cast gifted me a 90-minute massage. I’ve never had a such a long massage! I requested extra attention on my shoulders and neck after two weeks of conducting. It was quite a workout. Afterwards, Gary and I prepared our last dinner in the pool house with the remaining ingredients – Spinach and Mashed Potatoes with Tahini, Guacamole and Tortillas. This is my kind of comfort food.
