What Vegans Eat – Day 1171


Breakfast: We’re back from Costa Rica and craving our favorite foods. Gary made Corn Bread. He made it a little differently this time and made long strips of toast. Since it’s my birthday month I am treating myself with little things, like slathering my corn bread toast with lots of vegan butter. Mm.
Dinner: It’s good to be home! Gary made his famous marinated Tempeh with Roasted Potatoes and Carrots and served it with some Tikka Masala (with white beans in place of Tempeh in the recipe). We put it in the freezer before we left. It’s always nice to come home to things we’ve made that are in the freezer. It’s a gift to ourselves.
