Breakfast: I was spending today visiting at a hospital. I wasn’t hungry in the morning when I left but I knew there wouldn’t be anything to eat so I prepared my breakfast and lunch. When I was hungry I enjoyed this bowl of Soaked Oats with Soy Milk, Blueberries, Pumpkin Seeds, Walnuts and Cacao nibs.
There were plenty of Potato Chips to eat in the waiting room. Nurses, patients and visitors enjoyed them. All except me. Got to keep your customers coming back, that means keeping sick people sick with unhealthy potato chips. Oh, so these are baked. That makes them better? These Lays Baked Potato Chips are made with Dried Potatoes, Corn Starch, Corn Oil, Sugar, Salt, Soy Lecithin, Dextrose, and Annatto Extract (Color). They say there are 6 servings in the bag. But everyone I saw ate their bag themselves. That means that they got 720 calories, 810 mg of salt and 12 grams of fat!
Lunch: I celebrated bringing my own lunch, a gorgeous organic Kale Salad with Steamed Broccoli, Tomatoes and Tahini Dressing topped with some of the Vegetable Maki I didn’t finish last night. I had an Apple for dessert.
I sadly and smugly looked upon all the doctors, nurses and other medical staff getting their cups of Coca Cola. What is wrong with this picture?
Dinner: Back at my sister’s house I made us a light dinner of Sweet Potato Bean Salad. This is a luscious recipe and so easy to make!
