What Vegans Eat – Day 12

We eat when we are hungry. What a concept! Sometimes we have a lavish breakfast, sometimes none at all. This was a no breakfast day, just some Genmaicha green tea. Instead of eating I cooked up a storm. I like to prepare food to eat during the rest of the week. We had a lot of root vegetables from our Winter share CSA and we roasted turnips, beets, onions and carrots. I made a big pot of Vichyssoise, Potato Leek Soup.
 
Lunch: Vichyssoise, Potato Leek Soup garnished with chopped scallions served with sautéed collards and onions using 2 large bunches of collards, one per person. I love my greens!

Daily Green Juice: Kale, collards, celery, beets, carrots, lemon.
 
Dinner: With the roasted vegetables I prepared Polenta with Roasted Garlic and Basil.

Gary surprised me with cheesy garlic bread, made from his vegan mozzarella and roasted garlic.
