What Vegans Eat – Day 1284


Breakfast: It’s my day to visit mom. I took out a frozen Smoothie last night and enjoyed it this morning before taking off.

Lunch: On the way to mom’s I stopped at Whole Foods and bought a lot of food. We are having an unveiling of my dad’s grave marker on Sunday and Gary and I will be preparing food for our guests. After shopping, I brought everything in to mom’s house to stay cool. Mom likes Cauliflower and she had made some. It’s one of the few healthy things she makes regularly. She loves eating salads but for some reason she does not have the inclination to make them anymore. I was happy to share some of the cooked Cauliflower with her.

I made a big Blended Drink with Bananas, Pineapple, Romaine and Carrots. My brother was nearby so he came for a visit. We all had some.

Dinner: Back at home, I had a simple Romaine Lettuce Salad with Tahini Dressing and Olives. Gary had a performance tonight which unfortunately I had to miss.

Next I made a soup with the remaining cooked Tempeh, a cooked Potato and Collard Greens. This was a really good dish and one that will never occur again since it was made from leftovers.
