What Vegans Eat – Day 1294


Breakfast: For breakfast I had a bowl of Mung Bean Chowder. I love beans for breakfast, they’re a great way to start your day. Did you know that beans are filled with fiber? And resistance starch? And pre-biotics which feed probiotics? Beans fill you up and feed your gut!

Lunch: Really? You don’t like leftovers? This was a delicious and satisfying meal with yesterday’s Eggplant Rollantini, Cooked Potatoes, fresh Guacamole and Organic Corn Tortillas, plus Green Juices made with Kale, Collards, Carrots, Celery and Lemon.

For dessert we devoured a Cantaloupe.

Evening: Late in the sweltering evening I made us a cool Blueberry Banana Soy Milk smoothie.
