Breakfast: I confess – I love oatmeal. It’s creamy and comforting and never boring. At least not the way we make it. With the kitchen stocked with essentials (and my essentials are probably different than most), oatmeal is chocked with tasty surprises. This morning’s all organic oatmeal was cooked with sunflower seeds, apricots, coconut flakes and apples and sprinkled with ground flax. While cooking the oats, I defrosted some blueberries by putting them in a bowl resting in another bowl of hot water and they crowned the dish. My hot beverage was an organic Mix Berry Black Tea.
Daily Green Juice: Kale, Collards, Celery, Beets, Carrots, Lemon
As I mentioned before, we eat when we are hungry. Somehow lunchtime came and went. We had talked about making some fun food for our private Oscar party, but by 5pm we were really hungry and the leftovers I had made were looking really good. After watching Boyhood the day before, the scene of the students eating chips and queso were inspiring. Gary made a winter salsa and stirred it into the black beans, and made his own Baked Queso with his vegan mozzarella and salsa.
Dinner: Vichyssoise, Black Beans, Vegan Queso, Salsa, Corn Tortillas, Roasted Vegetables.
The dinner continued to be nibbled on throughout the Oscars show.
Evening: Peppermint Tea
