What Vegans Eat – Day 1329

Dinner: Eat when hungry! I ate late last night and wasn’t hungry most of the day. I was more than ready for dinner. We made Tacos, filled with everything – Baked Tofu, Pinto Beans, Guacamole, Sautéed Red Onions and a giant Kale Salad. The corn tortillas that we use for our soft tacos are organic, made with simple ingredients, corn and water and no gums.

 
Evening: I was working late and Gary surprised me with a gorgeous Teeccino Latte with his expert Soy Foam.
