What Vegans Eat – Day 1350


Breakfast: Today is our last day at home before flying to California. I had to check in on my mom and do some shopping for her. I grabbed a couple of Apples and got in the car.
Lunch: At mom’s house I ran around doing a bunch of chores. Then I made a big pot of Vegetable Soup with Potatoes, Onions, Carrots, Garbanzo Beans, Tomatoes, Tomato Sauce, Dill, Turmeric and Garlic Powder. I filled up 4 large jars and one big bowl. Plus mom and I ate some along with some Cauliflower. She will be eating my soup all week long while I am away.

Dinner: Back at home I finished up packing. Gary prepared all the food we had left. We sat down to a big meal of Romaine Lettuce Salad, Steamed Kale, Baked Tofu, Broccoli, Pinto Beans and leftover Tempeh Scramble. Whatever we didn’t finish would be going with us on the plane tomorrow to snack on during the flight.

Evening: We had lots of Apples, too many to bring and too many to eat. Gary made Apple Sauce and froze it. We had a little for a late night treat.
