What Vegans Eat – Day 1456

First Meal: I stayed over at my mom’s last night so that I could take her for a blood test. I took her for her annual exam a couple of weeks ago and the doctor wanted her to fast before drawing blood for some tests. I wish we knew that before. I put a note on the refrigerator last night to remind her not to eat anything. We got up, went to the clinic and she had her blood drawn. Then we went to visit my dad’s grave. Mom’s been wanting to do that for awhile. We had worked up an appetite by the time we sat down for our first meal. We went to the Cheesecake Factory and I invited her neighbor Laurie to join us. I began with Edamame, requesting no salt thank you.

 
I always get the Vegan Cobb Salad and I got it again. We all got it this time. I kept telling both of them how good it was, I sold them on it.

 
Second Meal:
When I got home I was glad to sit down to a big bowl of organic Yellow Split Pea Vegetable Soup with organic Almond Ricotta. Afterwards I ate an organic Apple.
