What Vegans Eat – Day 1476


First Meal: We are relaxing, trying to get in a celebratory mode today with Gary’s show completed. However, also quite numb because of the recent passing of his father. I suggested going to Crepes Bistro. We begin with Green Juice and Chamomile Tea.

Gary ordered the Avocado Crepe, his usual.

And I went with my favorite, the Garden Crepe, filled with lots of goodies, including Vegan Pesto. These crepes are very filling and stay with you all day.

Snack: I am working on a slideshow for Gary’s dad’s funeral this Saturday. I took a break with a sweet, organic Pear.

Second Meal: Gary went out to do some grocery shopping. I always like to finish up the produce that’s in the refrigerator when a new supply is coming in. I made two Stir Fries: Eggplant, Onions, Garlic and Carrots with an Apricot Butter/Apple Cider Vinegar Sauce; and a Broccoli, Red Cabbage, and Napa Cabbage mix. All organic, served with organic Brown Rice.
