First Meal: If you know me, you know I am prefer to sleep in, taking my time in the morning before I get into high working gear. Not today. Today I got up at 7am. There was a lot to do. I had a small, comforting breakfast to keep me going for a little while – Maté tea with Soy Milk, and the one remaining Fruity Corn Waffle with Fig Butter.
Second Meal:
First I shopped for mom at Trader Joe’s. Then I brought the car to Toyota for an annual safety inspection and some basic services. Oh, I was getting hungry while I waited. Then I went to mom’s. I made us a big salad with organic Baby Greens, organic Raspberries, organic Onions, Green Olives, organic Tomatoes, organic Garbanzo Beans and Balsamic Vinegar. I just bought her some organic Yellow Potatoes so I boiled up the older ones she had in the refrigerator. I also heated up a bag of frozen organic Broccoli that had been in the freezer a little too long for my liking. It was time to be eaten. I forgot to take a picture of this feast!
Tea: My friend Robin’s mom lives in the same complex as my mom. She needed a ride home so when it was time to leave, Robin came over and we drove to her house. She made me a fruit Tea with Cherries in it.
Third Meal: Back at home I couldn’t wait to have my Kale salad. I had made it yesterday, with organic Kale, organic Yellow Bell Pepper and organic Red Onions but I only dressed and ate half of it. The other half was waiting for me when I got home. I mixed a quick Tahini Dressing, added in some organic Tomatoes and it was done.
For dessert, I blended frozen Raspberries with unsweetened organic shredded Coconut and organic Soy Milk and made a creamy shake you could eat with a spoon
