What Vegans Eat – Day 161


Breakfast: When it’s hot I am not as hungry. I drink more water and eat more fruit. This morning I had just that, cool water and an apple.
Lunch: It’s millet mania! With more millet leftover and the temperatures still brutal, millet maki was back on the menu. I filled them with avocado, grated carrots, tomato and sesame seeds and serve it up with a fresh Fruity Hibiscus Ice Tea.
Daily Green Juice: Kale, Celery, Lime, Carrots, Mint, Cilantro
Dinner: Not wanting to cook very much I set some pink lentils soaking early in the day. They cook up super fast and when they are soaked the cooking time is even less. When the lentils were soft I added in leftover roasted veggies, plus a chopped onion and about a 1/4 cup of spices including onion powder, garlic powder, turmeric, paprika, summer savory, marjoram, masala curry. Gary blended it all up. We let it cool a little bit (hot soup on a hot day???) and enjoyed big bowls on the terrace.
