What Vegans Eat – Day 1610


First Meal: If you have been reading this blog for a while you will know that I like to clear out the refrigerator of most things before we travel. We’ll be leaving for California in a few days. There are a few glass jars with small amounts grains and flours so I decided to make pancakes. I combined a little organic Garbanzo Bean Flour with organic Millet that I ground into flour along with organic Corn Meal. I added enough water to make a batter and I was in business! Pancakes are on the grill.

I served the pancakes with organic Pears, organic Bananas, Raspberry Coulis, organic Apricot Butter and organic Peanut Butter.

Mm, this batter made a fine stack!

Second Meal: Gary made ribs! Well, to us, ribs are Baked Tofu. It went with a big Kale Salad.

Treat: This humidity and heat is tough to beat. I crave these frozen desserts during weather like this. Tonight’s was made with organic Strawberries, organic Bananas, and organic Soy Milk and a little vanilla.
