What Vegans Eat – Day 1720

First Meal: I bought Dates the other day specifically to make my new Pumpkin Bread recipe with them instead of Brown Sugar. I got everything prepped, spices, Dates, Figs, Walnuts, Pumpkin Purée, Vanilla, Gluten-free Flour and Baking Powder.

 
I blended up the Dates and Pumpkin. It was not easy because the dates were on the dry side. I had to pulse and scrape down the sides a bunch of times. I will try soaking them next time or buying softer dates. I didn’t want to add liquid to the recipe which is why I didn’t soak them in the first place.

 
While the bread baked I prepared some fresh Strawberries to serve with it. It comes out very moist. Gary preferred toasting his slices and I liked it moist and chewy.

 
I bought Miyoko’s Cream Cheese to try and didn’t realize it was a savory flavor, Un-lox Your Dreams. I tried it anyway. It’s good!

 
We warmed up the Cauliflower Potato Soup and I added Mushrooms to mine.

 
Tea Break: I made another Ginger Turmeric Latte with the Arbor Teas mix. I still don’t like it! It’s the Licorice Root that ruins it in my opinion. I will likely finish it and never buy it again.

 
Second Meal: Gary took charge for dinner making his own freestyle version of West African Peanut Stew with Garbanzo Beans, Spinach, Garam Masala and Peanut Butter.. I prepped the Guacamole and Tomato/Onion Salads for sides. There’s plenty leftover too. Mm, more tomorrow.
