What Vegans Eat – Day 204


Breakfast: What’s for breakfast? Fruity Waffles again?? Yay!! These are my new favorite and I am glad there are a bunch in the freezer ready to be reheated and devoured. We like to spread bananas on our waffles and then top with other fun spreads. I put blueberry coulis on mine.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Ginger
Lunch: Gary prepared a Kaleidoscope Salad with Marinated Tempeh, Fingerling Potatoes, Peas with Onions and Blanched Carrots. When I saw it on the table all I could say was “WOW!!”
Evening: Lunch was filling and lasted all through dinner. It was another hot, summer night that required a cool treat. I made sweet Chocolate Ice Dream.
