Breakfast: We got a new teapot! I love it and seasoned it with Kukitcha Tea. Oatmeal with apples, raisins and flax seeds went along with it.
Lunch: With Gary out at his acting class, I lunched on leftovers while working on the computer. I grabbed a container that I thought had kale salad and baked fries, but was pleasantly surprised to remember it was the Fritatta we had had the day before. And there was a bonus at the bottom – a piece of Baked Tofu.
A little later I dug into the Lion’s Head leftovers from Simple Veggie Cuisine which sadly will be closing this week.
Daily Green Juice: Kale, Celery, Carrots, Broccoli, Lemon, Ginger
Dinner: Thinking about the Beyond Sushi restaurant we thought we’d make some maki with REAL Spicy Aioli. Gary made it along with a lovely Miso Vegetable Soup. and I rolled the maki, filling them with Tri Colore Quinoa, Sesame Seeds and Avocado.
I love the REAL Spicy Aioli!
Lovely teapot!
I have been vegan for over twenty years and cannot tell you how many times people have said to me, “what do you eat?”. My standard answer is “everything!”. When I give them examples of what I eat in a day – which is generally more food and more often than they do, they are amazed. I’ve spent my entire adult life advocating a whole food way of living and when I listen to you show or read your blog often times it’s as as though I’m viewing a mirror image of myself and my passions – food, health, and a kinder way of living.
Thank you and ((sending you a big vegan hug))
