Breakfast: The morning began with tea. We had come home from California with a gift some family members gave us which they had purchased when in Italy a couple of months before: colorful glass mugs and ceramic spoons. I love drinking tea in glass mugs! I made a pot of Jasmine tea.
Then it was time to make a REAL favorite that we hadn’t had in a while – Cornbread. We didn’t have frozen corn or blueberries so we added sunflower seeds instead and schmeared them with peanut butter and agave.
Daily Green Juice: Kale, Celery, Carrots, Ginger
Snack: After doing a little food shopping we stopped at our favorite (and only) neighborhood, organic, vegetarian coffee shop, The Red Pipe. Gary had the Mocha Cappuccino with Coconut Milk and I had a green tea with a savory, herbed, gluten-free, muffin.
Dinner: It’s National Kale Day so of course we had to have some kale! We had a Lacinato Kale Salad with Avocado and Tahini Dressing, along with a Secret Spice Lentil Soup and Cornbread.
Evening: Late Night with Steve Colbert goes well with Teeccino and Coconut Milk served in an Italian glass mug.
