More cooking! One day until Thanksgiving and lots more to do. I wasn’t hungry until lunch time.
Lunch: My 89-year-old neighbor gave me a box of arugula. I tossed the entire contents with leftover brown rice, chopped black olives, raw onions and apple cider vinegar and ate it all. It was delicious and energizing.
I had made 15 mini apple pies the night before. I thought we should sample one with ice cream. That was a good idea!
Daily Green Juice:
Dinner: No dinner per se, just more sampling and tasting of the food we prepared for tomorrow’s big feast, liked the Baked Tofu and Tempeh in Crosta. Another good idea!
By about midnight we were done and somehow managed to fit it all in the refrigerator: Tempeh in Crosta, Baked Tofu, Garlic Mashed Potatoes, Candied Sweet Potatoes, Corn Bread Stuffing, 3 Vegan Cheeses, Mushroom Gravy, Cranberry Sauce, Apple Pies, Pumpkin Pie, Raw Pecan Pie; Risotto. Good night!
