What Vegans Eat – Day 330

Breakfast: What’s the different twist on this morning’s oatmeal? We’ve been out of soy milk for a while and haven’t had a chance to pick some up. (I just ordered some West Soy Unsweetened Soy Milk online). Gary made a quick milk from cashews. This topped our Oatmeal with fresh Blueberries, Walnut, Dried Apricots and Ground Flax Seeds. I had a Green Kukitcha Tea, from Arbor Teas.

Daily Green Juice: Kale, Collards, Carrots, Celery, Lime

Dinner: The evening before I soaked some black-eyed peas. I was thinking of putting them in a spicy coconut curry sauce and serving it over collard greens. A while back we bought a bag of organic turanicum. We had never tried them nor did we know what they were. We learned that turanicum is an ancient grain with a lovely texture, almost like corn kernels, and a sweet flavor. The instructions said the grains needed to be soaked overnight so I soaked some alongside the black-eyed peas. The result was spectacular. Here is the recipe for our Black Thai Peas. Since black-eyed peas are supposed to bring good luck on New Year’s Day, you might bookmark this Black Thai Peas recipe for next January 1st right after that Black Tie New Year’s Eve bash.

Evening: Playing around with some peanuts, Gary made this sweet evening treat to go with our evening cup of Halzelnut Teeccino.
