What Vegans Eat – Day 366


Breakfast: Life as art. Here is my morning breakfast palette with Banana, Opal Apple, Sliced Oranges, Oat Waffle, Apricot Butter, Peanut Butter, Tahini and Raspberry Apple Coulis served wtih Jasmine Tea.
Lunch: I got that lentil craving again. It happens from time to time. I love lentils but sometimes my body says, “lentils, NOW!” Fortunately they cook fast. I made a Carrot Lentil Soup. It serves about 4 – 8 people and Gary and I had two large bowls each and finished it all. No leftovers.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lime, Ginger
Tea Break: With our bellies full of leftovers we were not hungry for a long time. We took a tea break while still working early in the evening with Teeccino.
Dinner: It was late in the evening, we were still working and we began to talk about food. Gary made some carrot and celery sticks to have with his newest dressing, Cheesy Blue Ranch. That wasn’t enough. We both agreed on Oatmeal. I know a lot of people like to have cereal and milk at night. I am not one of them. But today, oatmeal seemed so right. And it was. Served with Vanilla Almond Rooibos tea.
