What Vegans Eat – Day 386

Breakfast: As promised, the Chinese Spinach dish from Green Zenphony that I had no room for the night before became breakfast. I like to make a quick soup of Chinese food leftovers adding water and leftover rice. Green Zenphony rice is nice! It has brown and red rice varieties.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lime, Ginger
 
Dinner: I’ll be talking with Miyoko Schinner on my IT’S ALL ABOUT FOOD show on March 30 and just received her most recent cookbook, Homemade Vegan Pantry. I looked it over just before dinner which consisted of more of the morning’s Chinese Spinach and rice. Plus, I had soaked and cooked a pile of yellow split peas before. We had some, like a soup, with Sky Valley Siracha sauce in it. That’s all it needed. It was perfectly delicious.

Evening: Our neighbor Marion was moving out of the building and heading to Florida. In her last few days here in Forest Hills she would leave little gift bags on our door of things she didn’t want anymore and didn’t want to throw away. She gave us a Yonanas, a fruit soft serve machine I had never heard of before. We use our Vitamix to make frozen treats. What I like better about the Yonanas is the soft serve stays cold and doesn’t melt as quickly since it doesn’t get hot like the Vitamix does. We made a Tropical Soft Serve with bananas, mango, pineapple and strawberries and topped it with shredded coconut and cacao nibs.
