Breakfast: The fever is gone but the appetite and energy are still at low levels. Gary made plain oatmeal and I asked him to give me three spoonfuls. He did.
Daily green Juice: Kale, Collards, Celery, Carrots. This week’s juice is high intensity kale, thick and bitter. I squeezed an entire lemon into it and diluted the mix. Then I was able to sip it slowly for a long time.
Dinner: The pasta, sauce and tempeh I never finished days before became a wonderful base for my vegan version of Beef-A-Roni. I took more of Gary’s homemade tomato sauce, put it in a pot and added water to make it the consistency of thick soup. I stirred in the pasta/tempeh leftovers and sliced up some leftover Baked Tofu into thin strips. Hurray! It’s vegan, no-beef-a-roni. Mm mm good.
Evening: Some evenings we both think about having something sweet and we say, “let’s make cookies!” We often say it. It’s fun to say. We rarely do it. We did it tonight. We made
Maple Peanut Butter Oatmeal Cookies served with Almond Rooibos Tea.
