What Vegans Eat – Day 399

Breakfast: My appetite is slow to coming back. I got up and drank a big pot of hot water with fresh lemon. It was exactly what I wanted and was very good!
 
Lunch: There was a Green Salad with Tahini Dressing that Gary had made for dinner that I had not touched. I was happy to eat it for lunch with a few pieces of Baked Tofu and Avocado.

I was very excited about the guests I had on my IT’S ALL ABOUT FOOD SHOW: Jeff and Joan Stanford, owners of the vegan, eco-resort resort, The Stanford Inn By the Sea on the Mendocino Coast. They shared their stories of how they began building the place back in the early 1980s. I’ve been wanting to visit for a long time and still have not found my way to Mendocino. It took a few minutes for my guests to warm up but once they got going, wow! Jeff Stanford was especially passionate about the reasons why they do what they do there, including making their restaurant 100% vegan back in 2012.

Dinner: Gary made a big, beautiful, fully loaded soup, with mung beans, lots of veggies, herbs and spices.

Gary’s appetite is much better than mine and he made some of his favorite hungry man food. He made his Herbed Flatbread.

And Baked Tempeh in Barbeque Sauce. Together with the Flatbread he made a BBQ Tempeh Steak Sandwich.

Evening: Our Maple Peanut Butter Oatmeal cookies seem right any time of the day!
