Breakfast: We have another spread to add to our favorite Peanut Butter (PB1) and that’s Prune Butter, (PB2). Look for PB1 and PB2 creations to come. Here is a variation on our Buckwheat Waffles. We are always mixing things up and this batch had some Rolled Oats and Sorghum Flour in the mix. I had mine with PB2, Gary had the PB2 combo.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Lime
Lunch: Gary was inspired to make sauce, or gravy as the old Italians call it. He made Spicy Marinara, the best! He cooked some with Shiitake Mushrooms and Onions for me (remember, he doesn’t like mushrooms) and we had a big Kale Salad Salad with Seed Caesar Dressing and more Carrot Lentil Soup.
Afternoon Tea: We love tea, and tea in the afternoon is fun, especially when there are Easter treats in the house. We had Chai tea with some squares of Dark Chocolate with Blueberries and shared a Dark Chocolate Peanut Butter Egg.
Dinner: When there is homemade marinara in the house, pasta is imperative. We smothered it with dust (nutritional yeast).
Evening: Since I received the message from my body wanting papaya and pineapple I think I will be buying these fruits more frequently. I cut open a ripe, sweet Pineapple and it was devoured, accompanied by Vanilla Almond Rooibos tea.
