What Vegans Eat – Day 419


Breakfast: The Green Smoothie is back. This one was made with 1 cup water, 2 cups packed Kale, 2 Tablespoons Flax Seeds, 2 Tablespoons Red Maca, One Pear, 1 cup frozen Blueberries. We sipped slowly. Served with Bai Mu Dan white tea.
Lunch: Yay! I love it when Gary makes his version of Joe’s Special. I call it Gary’s special, inspired by Joe, whoever that is! Find out in the recipe link for Gary’s Special!
Daily Green Juice: Kale, Collards, Celery, Carrots, Lime
Dinner: It was time for Green Zenphony. We had been talking about going there for days and always found good reasons to stay in, stay dry, stay warm, stay economical and eat our own good food. At last the day arrived. We ordered in. We are always so impressed with how beautiful the Green Zenphony folks prepare their food in the to-go containers. I order the Wheels of Dharma, Shiitake Mushrooms on a bed of Mashed Yams bordered with sweet peas and topped with Almond Slices in a golden aromatic sauce. Isn’t it beautiful what they did with the yams and peas?
I tried to make a nice presentation on my plate. All of a sudden we found our eyes bigger than our stomachs and took small portions of everything.
Gary had his new favorite, the Veggie Beef Chow Fun. And of course we ordered the Snow Pea Shoots in Ginger Sauce. There was so much left over! See what happens to it all in the next few days of What Vegans Eat, Days 420 and 421.
