What Vegans Eat – Day 433

Breakfast: Thinking about Dr. Joel Fuhrman’s recommendation to eat G-BOMBS – Greens, Beans, Onions, Mushrooms, Berries, Seeds, I challenged myself to make a new breakfast dish that contained all those ingredients. I created the G-BOMBS burrito using Chickpea Socca Wrap and filling it with Sautéed Red Onions, and a Kale/Mushroom/Strawberry mixture that I gently steamed. I topped it with Sesame Tahini dressing and raw Red Onions.

Afternoon Tea: Spring has sprung! Finally. The weather is warm and the air is fresh. We celebrated with Teeccino on the terrace.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lime
 
Dinner: Gary was out for a run on this beautiful day and I promised to have dinner ready when he returned. Since we were getting our GoOrganicNYC delivery the following day I wanted to clear out the produce that was still left. I made a feast with Miso Vegetable Soup, Avocado Maki and Kale/Pineappe/Corn Salad.
