What Vegans Eat – Day 444


Breakfast: With leftover mashed potatoes I piled them on my plate and topped them with porcini mushrooms. For me that’s pretty close to heaven on Earth. A coconut milk/banana/vanilla shake made this a luxurious meal.
Lunch: We are putting in a lot of long hours lately and Gary and I were both up for comfort foods. He made another favorite, Brown Rice topped with Tahini Dressing.
Dinner: I was invited to my friend Rachael’s home along with four other woman to brainstorm about her artistic transition. She had recently got her contractor’s license and renovated her four floor Brooklyn Brownstone! That was quite an amazing feat and it looks amazing! Now that that huge job was finished she wasn’t sure what was next. She set a lovely table and paid close attention to everyone’s dietary needs (vegan, gluten-free, etc.) and comments. The consensus was the food was delicious and Rachael should rest.
After munching on celery, carrots, hummus, tapenade, cherry tomatoes, and strawberries we were served a fabulous Kale Salad with sunflower seeds, pomegranate, avocado and a lemon and olive oil dressing.
I was quite sated after that fabulous salad but the food kept coming. Rachael made a lovely pasta dish with tomato sauce, fresh sage and Daiya cheese.
