Breakfast: Now in Day 3 of the Food Revolution Summit, I worked away at the computer while noshing on leftover Light and Crispy Oat Waffles with Peanut Butter Cream and Prune Butter. Life is oh so good. Hibiscus tea was my hot beverage.
Lunch: A Dr. Ornish recipe seen in What Vegans Eat – Day 443 is transformed into our Roasted Red Pepper Cauliflower Torte. What a transformation! It’s like a bread pudding or kugel only made with cauliflower and that amazing favorite ingredient of ours, chickpea flour.
Daily Green Juice: We were invited to a screening for a new film being shown in Manhattan’s East Village. We got there early and walked into the nearest cool looking coffee shop. This one was called The Bean and it was so cool because in addition to coffees and teas, they made juice! Organic Green Juice. Just check out the menu.
We both got the Green Bean with Romaine, Swiss Chard, Celery, Parsley, Spinach, Cucumber and Kale. Mm good!
Evening: We got home later than expected and I still had some work to finish. Gary prepared some toast for me with vegan butter along with Chamomile Tea.
