What Vegans Eat – Day 476: Special Travel Edition


Breakfast: We were off to hike the trail at Lexington Reservoir County park. We drank some chilled green tea and took off before it got too hot.
Lunch: I was so hungry after our big walk (about 2 hours). I put a plate together of leftovers from the party on Saturday: Green Beans, Potato and Quinoa Salad. I finished with a Banana and a Nectarine. Once again, the hunger was gone.
Daily Green Juice: Whole Foods Vasona Green Juice with Kale, Carrots and other goodies!
Dinner: We had thought of going to Andalé in Los Gatos for breakfast after our walk but we got there too early and they weren’t opened. We came back for dinner. I had the Tofu Tacos.
They had a lot of great sauces and condiments to season up your food just the way you like including Jalapenos, Pickled Red Cabbage and several Salsas. I was in a spicy mood and Gary was not, although he typically loves hot, spicy food. So the sauces and condiments were all for me.
Evening: We need to do some food shopping! Using what was available, I put together some bowls of Oranges, Walnuts and Bananas to satisfy our evening sweet cravings.
